The Mughlai Delight
The most popular cuisine is Mughlai owing its origin in India with the
entry of the Mughals in the 16th century. They introduced a new style of
cooking, using clay ovens or 'tandoors' as they are known. Several local
herbs and spices found their way into these dishes, giving rise to a style
called Mughlai food.
For gourmets, Delhi is synonymous with Mughlai and
